Eggroll
.
Of course there are several varieties and ways to make
eggrolls, but this recipe is for the type of eggroll that I usually
make....
The only ingredient that I think you might have trouble
obtaining is the curry powder, but you can get that at any indian grocery
store. As far as the wrappers are concerned, you can get those at any
asian markets ("Menlo" is the brand that I use because they wrap really
well!)
Serving size - about 60 eggrolls
2 pkgs menlo wrappers
8-9 mid-sized potatoes
1/2 cup chopped celantro
1/2 cup chopped onions
2 pkgs ground chicken
2 tspns finely chopped/smashed garlic
2 1/2 tspns curry powder (masala)
about 2 tspns salt to taste
1/2 tspn ground red pepper......or less =)
Start off by peeling and cutting the potatoes into small
pieces
Wash and drain, pour potates into med sized pot. Add 1/2
cup water, sprinkle some red pepper, and salt. Add 1/2 tspn of garlic let
cook in a covered pot over low/medium heat
meanwhile...
start cooking the ground chicken adding 1/2 cup of water,
sprinkle red pepper and salt. Also add 1/2 tspn of garlic.
Cook until well done/drain excess fat.
Check on the potatoes. They're done when the water has been
dried out and the potatoes are nice and tender.
MIXTURE (find a LARGE bowl)
add potatoes, and you can mash them if you like, or you can
keep whole. Add the chicken. Add in the onions, and celantro. Distribute
the curry powder evenly. Add the rest of the red pepper that you have not
used. Add in 1 tspn of salt. Add 1tspn of garlic. Mix WELL. Mixture is
officially done. EASY huh! You can add other spices if you wish to, or
any vegetables. Sometimes when I want to add vegetables I use the frozen
package of mixed vegetables ex(peas&carrots) and saute and then add to my
mixture. But like I said, you can add anything you WANT.
rolling them is easy, just separate the wrappers make sure
you don't keep them out from the package for a long time, because they do
get dry sometimes and hard to roll without the pastry splitting.
Just put a little portion of the mixture in once corner of
the wrapper, roll tightly about two times, add some water or scrambled egg
to the remaining three corners, fold in the two sides and then tightly
roll the rest of the way. EASY!
